Spaghetti Squash with Potatoes & Carrots

 

Spaghetti Squash with Potatoes & Carrots

  • 1/2 spaghetti squash
  • 3 large carrots
  • 5 mini potatoes
  1. Preheat the oven to 400 F°

  2. Slice the squash in half
  3. Use a spoon to scrape out the seeds
  4. Discard the seeds or save and toast them for a snack
  5. Place the squash halve, cut-side down, in a roasting pan
  6. Wash you potatoes and carrots
  7. Leave them as they are and also place them in the roasting pan
  8. Place it all in oven and cook for 30 to 45 minutes
  9. The squash is ready when you can easily pierce a fork through the flesh all the way
  10. Serve with some additional sauces you like
