Ingredients

  • 1/2 spaghetti squash
  • 3 large carrots
  • 5 mini potatoes

Instructions

  • Preheat the oven to 400 F°
  • Slice the squash in half
  • Use a spoon to scrape out the seeds
  • Discard the seeds or save and toast them for a snack
  • Place the squash halve, cut-side down, in a roasting pan
  • Wash you potatoes and carrots
  • Leave them as they are and also place them in the roasting pan
  • Place it all in oven and cook for 30 to 45 minutes
  • The squash is ready when you can easily pierce a fork through the flesh all the way
  • Serve with some additional sauces you like
