Spaghetti Squash with Potatoes & Carrots

Ingredients
- 1/2 spaghetti squash
- 3 large carrots
- 5 mini potatoes
Instructions
- Preheat the oven to 400 F°
- Slice the squash in half
- Use a spoon to scrape out the seeds
- Discard the seeds or save and toast them for a snack
- Place the squash halve, cut-side down, in a roasting pan
- Wash you potatoes and carrots
- Leave them as they are and also place them in the roasting pan
- Place it all in oven and cook for 30 to 45 minutes
- The squash is ready when you can easily pierce a fork through the flesh all the way
- Serve with some additional sauces you like
