Cashew Veggie Coconut Curry
Ingredients
- 1 carrot
- 1 zucchini
- 2 tbsp coconut oel
- 1-2 cups coconut milk
- 4 tbsp tomato paste
- 3 tbsp curry powder
- 1 handful cashews
Instructions
- With a vegetable peeler, peel stripes of one zucchini and one carrot
- Set aside
- In a large frying pan, heat some coconut oil
- Add a good handful raw cashews
- Add coconut milk
- Add tomato paste
- Add curry powder
- Cook for about 5 minutes
- Add veggie stripes and cook for another 10 minutes
