Cashew Veggie Coconut Curry

 

Cashew Veggie Coconut Curry

  • 1 carrot
  • 1 zucchini
  • 2 tbsp coconut oel
  • 1-2 cups coconut milk
  • 4 tbsp tomato paste
  • 3 tbsp curry powder
  • 1 handful cashews
  1. With a vegetable peeler, peel stripes of one zucchini and one carrot
  2. Set aside
  3. In a large frying pan, heat some coconut oil
  4. Add a good handful raw cashews
  5. Add coconut milk
  6. Add tomato paste
  7. Add curry powder
  8. Cook for about 5 minutes
  9. Add veggie stripes and cook for another 10 minutes
