Butternut Squash Noodles

 

Butternut Squash Noodles

  • 1/2 butternut squash (large)
  • 1 tbsp extra virgin olive oil
  • 1/4 cup almonds (sliced)
  • 1 tbsp extra virgin olive oil
  • 1 large garlic clove (minced)
  • 1/4 tsp red pepper flakes
  • 1 onion (minced)
  • 1/2 cup oat milk
  • Salt and pepper (for seasoning)
  1. Preheat the oven to 400 °F

  2. Peel the butternut squash
  3. Cut the butternut in 2 pieces so it’s easier to handle, then spiralize using the thickest noodle setting of your spiralizer (use a vegetable spiralizer)
  4. Transfer to a baking sheets with parchment paper
  5. Add onions and garlic and drizzle with oil, salt and black pepper
  6. Roast until soft, 7 to 10 minutes
  7. While the butternut squash is cooking, place a large pot over medium heat
  8. Once heated, add in the olive oil, onions, garlic and oat milk
  9. Add in salt pepper and pepper flakes
  10. When the noodles are ready also add them into the pan
  11. Cook for 2 minutes and serve
  12. Top with toasted almonds
