Penne Casserole

 

Penne Casserole

  • 75 g Penne
  • 1/2 onion (chopped)
  • 1 tsp salt
  • 1 tsp hot pepper flakes
  • 1 tsp paprika
  • 1 tsp turmeric
  • 1 cup hemp milk
  • 1 small bunch broccolini
  • 1 tbsp olive oil
  • 1 handful vegan cheese
  1. Preheat oven to 450 F°

  2. In a pot, bring water with salt to boil
  3. Add penne and cook according to packaging
  4. In the meantime cut the stems off the broccolini
  5. Spread a Casserole dish with olive oil
  6. Mix all ingredients together in a large bowl
  7. Transfer into casserole dish
  8. Top with some more vegan cheese
  9. Bake covered for 25 to 30 minutes
