Energy nut bars

  • 1 cup packed dates (pitted)
  • 1/4 cup maple syrup
  • 1/4 cup almond butter
  • 1 cup roasted unsalted almonds (loosely chopped)
  • 1 1/2 cups rolled oats
  • 2 tbsp chia seed
  • 2 tbsp flax seed
  • 1/4 cup walnuts (crushed)
  1. Process dates in a food processor until small bits remain (about 1 minute)
  2. It should form a “dough” like consistency
  3. Toast your oats, almonds and walnuts for 10-15 minutes at 350 F°, until slightly golden brown

  4. Chop your almonds
  5. Place oats, almonds, walnuts and dates in a large mixing bowl – set aside
  6. Warm maple syrup and almond butter in a small saucepan over low heat
  7. Mix everything together in the bowl
  8. Transfer to a small baking dish lined with parchment paper
  9. Use a glass to press down firmly until flattened
  10. Cover with parchment, and let firm up in freezer for 15-20 minutes
  11. Remove bars from pan and chop into even bars

Store leftovers in freezer for a few days.
