Ratatouille

A delicious way of eating a good range of tasty vegetables at once. I personally love Ratatouille, thats one of the main meals I grew up with. This is almost as tasty as my mom would cook it 🙂

  • 1 onion
  • 2 garlic gloves
  • 1 eggplant
  • 3 matoes
  • 1 zucchini
  • 1 26 ounce 26-ounce jar of tomato sauce
  • Fresh basil for serving
  1. Preheat the oven to 375 F
  2. Slice the onion, eggplant, tomatoes and zucchini into thin slices
  3. Mince the garlic, sauté the garlic with a little bit of olive oil in a skillet pan
  4. Add in tomato sauce and cook for a few minutes
  5. Pour half of the Sauce into the baking dish
  6. Stack the veggie slices in alternating patters and place them in a baking pan
  7. Repeat until the pan is filled and all the veggie slices are used up
  8. Pour the rest of the tomato sauce over it
  9. Sprinkle the exposed tops of the veggies with oil , salt and pepper
  10. Cover with aluminium foil
  11. Bake for about 45 minutes, until veggies are tender
