Fried tofu with mixed Grains
A lot of people are hard to convince, that tofu can acually taste like something good. And I totally get it! But this is one of my favourite waysnof making fried Tofu, try it and let me know if you like it.

Ingredients
- 1 cup Couscous
- 1/2 cup red quinoa
- 1 cup peas
- 1/2 cup green zucchini chopped
- 1/2 cup yellow zucchini chopped
- 1/2 red onion chopped
- 1 tsp salt
- 1 tsp pepper
- 1 tsp turmeric
- Olive oil
- Matzo meal
- Parsley
- 1/2 cup cashews
Instructions
- Preheat oven to 200 F
- Combine 1 cup Couscous with 2 cups water in a small saucepan
- Combine 1/2 cup quinoa with 1 cup water in another saucepan
- Cook both until water is absorbed
- Drain tofu , cut into slices and dry with paper towels
- Chop you veggies and set aside as well
- In a frying pan heat a good amount of olive oil on medium heat
- Prepare one small bowl with olive oil and turmeric and another with the matzo meal
- Dip each tofu slice in the olive oil and than in the matzo meal
- Fry tofu for 2-3 minutes
- Dry with paper towels again and keep warm in the oven
- In the same frying pan combine Couscous, quinoa, zucchini, peas and onion
- Cook for 5-10 minutes, add some parsley and cashews towards the last few minutes of cooking
