Sweet Potato stuffed with Rice

 

Sweet Potato stuffed with Rice

  • 1 large sweet potato
  • 1/2 cup lotus rice
  • 1 1/2 cup water
  • Handful arugula
  • Some fresh lemon juice
  1. Preheat oven to 425 °F

  2. Wash potato cover in aluminum foil and bake for 45 minutes until soft
  3. Meanwhile combine the rice and water in a saucepan and cook until the water is dissolved and the rice is soft
  4. Cut the avocado in half and cut one half into even pieces
  5. Cut potato lengthwise and stuff with rice
  6. Add some arugula, fresh lemon juice and the avocado
