Sweet Potato stuffed with Rice

  • 1 large sweet potato
  • 1/2 cup lotus rice
  • 1 1/2 cup water
  • Handful arugula
  • Some fresh lemon juice


  • Preheat oven to 425 °F
  • Wash potato cover in aluminum foil and bake for 45 minutes until soft
  • Meanwhile combine the rice and water in a saucepan and cook until the water is dissolved and the rice is soft
  • Cut the avocado in half and cut one half into even pieces
  • Cut potato lengthwise and stuff with rice
  • Add some arugula, fresh lemon juice and the avocado
