Sweet Potato stuffed with Rice

Ingredients
- 1 large sweet potato
- 1/2 cup lotus rice
- 1 1/2 cup water
- Handful arugula
- Some fresh lemon juice
Instructions
- Preheat oven to 425 °F
- Wash potato cover in aluminum foil and bake for 45 minutes until soft
- Meanwhile combine the rice and water in a saucepan and cook until the water is dissolved and the rice is soft
- Cut the avocado in half and cut one half into even pieces
- Cut potato lengthwise and stuff with rice
- Add some arugula, fresh lemon juice and the avocado
