Lentil Chickpea Burger

Lentil Chickpea Burger

  • 1/2 cup lentils
  • 1/2 white onion (chopped)
  • 1 handful fresh salad
  • 1 small can chickpeas
  • 1/2 cup cashews
  • 1/4- 1/2 cup water
  • 1 tbsp Olive oil
  • 2 burger buns
  • 3 tbsp bread crumbs
  1. Preheat oven to 450 F°

  2. Soak cashews in hot water for a few minutes
  3. Heat water in a sauce pan and cook lentils until soft, 30 to 40 minutes
  4. Drain lentils and chickpeas, combine both in a bowl and mash together
  5. Add the bread crumbs, combine well and form 2 round burger patties
  6. Place on a baking sheet and bake for 20 minutes, flip halfway through baking
  7. In the meantime, drain the cashews and place them in a blender with the water , mix until smooth, add water as desired
  8. In the last minute of baking add the burger buns into the oven until warm and crispy
  9. Prepare your burger on a plate and add any vegetables and dressings if you want
