Lentil Chickpea Burger

Ingredients
- 1/2 cup lentils
- 1/2 white onion chopped
- 1 handful fresh salad
- 1 small can chickpeas
- 1/2 cup cashews
- 1/4- 1/2 cup water
- 1 tbsp Olive oil
- 2 burger buns
- 3 tbsp bread crumbs
Instructions
- Preheat oven to 450 F°
- Soak cashews in hot water for a few minutes
- Heat water in a sauce pan and cook lentils until soft, 30 to 40 minutes
- Drain lentils and chickpeas, combine both in a bowl and mash together
- Add the bread crumbs, combine well and form 2 round burger patties
- Place on a baking sheet and bake for 20 minutes, flip halfway through baking
- In the meantime, drain the cashews and place them in a blender with the water , mix until smooth, add water as desired
- In the last minute of baking add the burger buns into the oven until warm and crispy
- Prepare your burger on a plate and add any vegetables and dressings if you want
