Mini Pancakes

  • 1 cup whole wheat flour
  • 1 tbsp brown sugar
  • 1 tbsp baking powder
  • 1 tsp ground cinnamon
  • 1 cup almond milk
  • 2 tbsp non-dairy butter (melted, such as earth balance)
  • 1 + 1/2 tsp vanilla extract
  1. Whisk dry ingredients in a large bowl
  2. Measure out milk in a large liquid measuring cup, then add vanilla and melted butter and whisk
  3. Add wet to dry and gently whisk until combined
  4. Let set for 5 minutes, while you preheat your pan with a little oil to medium-low heat
  5. Scoop out 1/4 cup measurements onto pan
  6. Flip when bubbles appear on top – 2-3 minutes
  7. Cook for another 2 more minutes on the other side
  8. Serve with you favourite toppings
