Pumpkin Bread

Pumpkin Bread

  • 1 3/4 cup all-purpose (unbleached flour)
  • 3/4 cup cane sugar
  • 1 tsp baking powder
  • 1/2 tsp fine salt
  • 3 tbsp vegan chocolate chips
  • 3 tbsp sunflower seeds
  • 2 tbsp cinnamon
  • 1 cup canned pumpkin purée
  • 2 tbsp mashed banana
  • 3 tbsp maple syrup
  • 5 tbsp unsweetened vanilla almond milk
  1. Preheat oven to 350 F°

  2. Line a loaf pan with parchment paper
  3. In a large bowl, whisk together all ingredients, first wet then dry
  4. Mix until just well combined
  5. Transfer into prepared loaf pan
  6. Bake 45-50 minutes or until a knife comes out clean and the top is browned
  7. Let cool for 10 minutes before slicing

Store leftovers in refrigerator.
