Pumpkin Bread
Ingredients
- 1 3/4 cup all-purpose unbleached flour
- 3/4 cup cane sugar
- 1 tsp baking powder
- 1/2 tsp fine salt
- 3 tbsp vegan chocolate chips
- 3 tbsp sunflower seeds
- 2 tbsp cinnamon
- 1 cup canned pumpkin purée
- 2 tbsp mashed banana
- 3 tbsp maple syrup
- 5 tbsp unsweetened vanilla almond milk
Instructions
- Preheat oven to 350 F°
- Line a loaf pan with parchment paper
- In a large bowl, whisk together all ingredients, first wet then dry
- Mix until just well combined
- Transfer into prepared loaf pan
- Bake 45-50 minutes or until a knife comes out clean and the top is browned
- Let cool for 10 minutes before slicing

Store leftovers in refrigerator.
