Pumpkin Sandwich


Pumpkin Sandwich

  • 1 small pumpkin
  • 1 half onion
  • Your choice of salad
  • 2 tbsp dairy free butter
  • 1 whole wheat bun
  • 1 handful walnuts
  1. Preheat oven to 375 F°

  2. Cut your pumpkin in half and spoon out the seeds

  3. Cut one half into chunks

  4. Prepare a baking dish with parchment paper

  5. Arrange pumpkin chunks on dish

  6. Roast for 30 minutes until soft

  7. Place pumpkin in blender

  8. Mix until smooth and set aside

  9. Thinly slice onion

  10. In a large skillet melt butter over medium-low heat

  11. Add the onions and cook covered for 10 to 15 minutes, until the onions are tender

  12. Uncover the skillet and cook and stir over medium-high heat for 3 to 5 minutes more or until onions are golden

  13. Spread your bottom bread with the pumpkin spread

  14. Add onions and walnuts

  15. Add some greens and top with top bread
