Thai fried Rice

Ingredients
- 1 tablespoon olive oil
- 1 cup broccoli florets - bite sized
- 1 small can Chickpeas
- 1/2 small onion chopped
- 1 cup cooked rice of your choice *
- 1/2 red bell pepper cut into small pieces
- 1 tbsp peanuts
- 1 tbsp Soy sauce
Instructions
- Add the olive oil to a large nonstick skillet set over medium heat
- When hot, add in the onion and cook for about 2 to 3 minutes, until it starts to soften
- Stir in the pepper, broccoli and Chickpeas, cook for about 5 to 7 minutes
- Add the cold rice to the skillet and cook, stirring frequently, for 3 to 4 minutes, until fried and hot
- Remove from the heat and stir in the peanuts and soy sauce
Notes
*For fried rice recipes it is useful to have some pre-cooked rice in your fridge*
