  • 1 tablespoon olive oil
  • 1 cup broccoli florets - bite sized
  • 1 small can Chickpeas
  • 1/2 small onion chopped
  • 1 cup cooked rice of your choice *
  • 1/2 red bell pepper cut into small pieces
  • 1 tbsp peanuts
  • 1 tbsp Soy sauce


  • Add the olive oil to a large nonstick skillet set over medium heat
  • When hot, add in the onion and cook for about 2 to 3 minutes, until it starts to soften
  • Stir in the pepper, broccoli and Chickpeas, cook for about 5 to 7 minutes
  • Add the cold rice to the skillet and cook, stirring frequently, for 3 to 4 minutes, until fried and hot
  • Remove from the heat and stir in the peanuts and soy sauce


*For fried rice recipes it is useful to have some pre-cooked rice in your fridge*
