Warm Quinoa Salad with Zucchini Noodles

 

Warm Quinoa Salad with Zucchini Noodles

  • 1 medium zucchini
  • 1 can (7.75 ounces, Chickpeas)
  • 1 cup cabbage (shredded)
  • 1 cup bell pepper (sliced)
  • 2 scallions (thinly sliced)
  • 1/4 cup cilantro (chopped)
  • 1 cup quinoa (cooked)
  • 1/4 cup dry roasted peanuts

Sauce

  • 2-3 tbsp creamy almond butter
  • tsp sriracha sauce or asian hot sauce of choice
  • 1/4 tsp ground ginger
  • Water as needed to thin the sauce
  1. Slice the ends off the zucchini and secure it to your spiralizer
  2. Spiralize the zucchini into long noodles and transfer to a large bowl
  3. Thinly, slice cabbage and pepper
  4. Add that to the bowl with the zucchini noodles, along with the scallions, cilantro, quinoa, Chickpeas and peanuts
  5. In a small bowl, whisk together dressing ingredients
  6. Add water, 1 tablespoon at a time, until it’s thin enough to pour
  7. Pour dressing over the vegetables and toss to coat
  8. Transfer to two bowls and sprinkle with a bit more peanuts and cilantro
