For the noodles: 1 big carrot, made into noodles For the sauce: 1 tbsp good olive oil 3 tbsp fresh lemon juice 1 tsp grated ginger 1 small garlic clove, grated Handful of parsley (chopped), 1 tbsp black sesame seed 1 tbsp pine nuts

Carrot Noodles

Plant based noodles are such a great option. You can make noodles out of carrots, cucumbers, potatoes, beets, pumpkin and more. Eat them raw like shown in this recipe or cook them, up to how you feel. I like them raw and fresh, esecially in summer.

Ingredients

Noodles

  • 1 big carrot made into noodles

Sauce

  • 1 tbsp good olive oil
  • 3 tbsp fresh lemon juice
  • 1 tsp grated ginger
  • 1 small garlic clove grated
  • Handful of parsley chopped
  • 1 tbsp black sesame seed
  • 1 tbsp pine nuts

Instructions

  • Mix all the ingredients for the sauce, until all is combined
  • Cut your carrot into noodles with a spiralizer
  • Pour sauce over the carrots and gently toss to coat
  • Top with parsley, sesame and pine nuts and serve fresh
