Carrot Noodles

Plant based noodles are such a great option. You can make noodles out of carrots, cucumbers, potatoes, beets, pumpkin and more. Eat them raw like shown in this recipe or cook them, up to how you feel. I like them raw and fresh, esecially in summer.

Noodles

  • 1 big carrot (made into noodles)

Sauce

  • 1 tbsp good olive oil
  • 3 tbsp fresh lemon juice
  • 1 tsp grated ginger
  • 1 small garlic clove (grated)
  • Handful of parsley (chopped)
  • 1 tbsp black sesame seed
  • 1 tbsp pine nuts
  1. Mix all the ingredients for the sauce, until all is combined
  2. Cut your carrot into noodles with a spiralizer
  3. Pour sauce over the carrots and gently toss to coat
  4. Top with parsley, sesame and pine nuts and serve fresh
