My favourite Banana Bread
Ingredients
- 3 large very ripe bananas mashed
- 2 tbsp ground flaxseed
- 1/3 cup oat milk
- 1/3 cup coconut oil melted
- 2 tbsp pure maple syrup
- 1/4 cup plus 2 tbsp brown sugar
- 1/2 cup rolled oats
- 1/2 tsp baking powder
- 1/2 tsp fine sea salt
- 1 1/2 cups spelt flour
- 1 Sliced banana
- 1 Handful chopped walnuts
Instructions
- Preheat the oven to 350°F
- Lightly grease a loaf pan with oil and set aside
- In a large bowl, mash the banana until almost smooth
- Stir ground flax, milk, melted oil and maple syrup into the banana until combined
- Stir sugar, oats, baking powder, salt, and flour into the wet mixtures
- Spoon the dough into the loaf pan and spread out evenly
- Add your slices banana and crushed walnuts, gently press them into the dough
- Bake the loaf, uncovered, for about 45, until lightly golden and firm on top
- Slice the loaf once cooled
Notes
The loaf will keep in the fridge tightly wrapped for 3 days.
