Breakfast Tortilla

Ingredients
- 1/2 small red onion chopped
- 1/4 cup green zucchini cut into small cubes
- 1 large potato
- 1 cup chickpea flour
- 1 cup water
- Olive oil
- 1/4 tsp salt
Instructions
- Peel and wash your potatoes than cut into small pieces
- In a large frying pan heat oil, when hot add onions, potatoes and zucchini
- Cook for 10 to 15 minutes
- In a bowl combine flour, water, salt and potato mixture
- Give more oil in a frying pan and heat over medium heat
- Add tortilla mixture and cook for 5 minutes
- Place a plate over tortilla and flip
- Cook on the other side for about another 5 minutes
- Turn over again if required
