Breakfast Tortilla

 

Breakfast Tortilla

  • 1/2 small red onion (chopped)
  • 1/4 cup green zucchini (cut into small cubes)
  • 1 large potato
  • 1 cup chickpea flour
  • 1 cup water
  • Olive oil
  • 1/4 tsp salt
  1. Peel and wash your potatoes than cut into small pieces
  2. In a large frying pan heat oil, when hot add onions, potatoes and zucchini
  3. Cook for 10 to 15 minutes
  4. In a bowl combine flour, water, salt and potato mixture
  5. Give more oil in a frying pan and heat over medium heat
  6. Add tortilla mixture and cook for 5 minutes
  7. Place a plate over tortilla and flip
  8. Cook on the other side for about another 5 minutes
  9. Turn over again if required
