Zucchini Fries

 

Zucchini Fries

  • 1 large zucchini
  • 1 cup bread crumbs
  • 1/2 cup flex seed
  • 2 tbsp dry quinoa
  • Olive oil
  • 1 avocado
  • 4 tbsp vegan mayo
  • 2 tbsp lime juice
  1. Preheat your oven to 425 °F

  2. Line a baking sheet with parchment paper
  3. Slice one large zucchini lengthwise into fries
  4. In a dish, whisk together bread crumbs, flex seed and quinoa
  5. Place the sliced zucchinis into a large bowl and drizzle in the oil
  6. Place into the dish and completely coat with the crumb mixture on all sides
  7. Place in baking dish
  8. Bake for 15 minutes and then turn the sheet to the other side
  9. Bake another 10 minutes or until golden brown

Dip

  1. Half one avocado, spoon out, place in a bowl and mash
  2. Add 4tbsp of vegan mayo mix together and squeeze some lime juice in
