Mac & Cheese Muffin

 

Mac & Cheese Muffin

  • 1 cup macaroni
  • 1 can chickpeas
  • Olive oil
  • Curry powder
  • 1/4 tsp Salt
  • 1/4 tsp Paprika
  • 1/4 cup almond milk
  • 1/2 cup vegan cheese
  1. Preheat the oven to 350 °F

  2. Cook macaroni in a large pan with salted boiling water until tender
  3. About 15 to 20 minutes
  4. Drain canned chickpeas and place them on a baking sheet
  5. Top with olive oil, curry powder, salt and paprika
  6. Set aside
  7. Add macaroni back into pan add a little bit of oat milk and enough vegan cheese
  8. Cook until cheese is melted and all is well mixed together
  9. Place mac and cheese mixture in a muffin baking form
  10. Place both mac&cheese and chickpeas in oven and bake for 15 to 20 minutes
  11. Serve hot
