Mac & Cheese Muffin

Ingredients
- 1 cup macaroni
- 1 can chickpeas
- Olive oil
- Curry powder
- 1/4 tsp Salt
- 1/4 tsp Paprika
- 1/4 cup almond milk
- 1/2 cup vegan cheese
Instructions
- Preheat the oven to 350 °F
- Cook macaroni in a large pan with salted boiling water until tender
- About 15 to 20 minutes
- Drain canned chickpeas and place them on a baking sheet
- Top with olive oil, curry powder, salt and paprika
- Set aside
- Add macaroni back into pan add a little bit of oat milk and enough vegan cheese
- Cook until cheese is melted and all is well mixed together
- Place mac and cheese mixture in a muffin baking form
- Place both mac&cheese and chickpeas in oven and bake for 15 to 20 minutes
- Serve hot
