Ingredients

  • 1 cup macaroni
  • 1 can chickpeas
  • Olive oil
  • Curry powder
  • 1/4 tsp Salt
  • 1/4 tsp Paprika
  • 1/4 cup almond milk
  • 1/2 cup vegan cheese

Instructions

  • Preheat the oven to 350 °F
  • Cook macaroni in a large pan with salted boiling water until tender
  • About 15 to 20 minutes
  • Drain canned chickpeas and place them on a baking sheet
  • Top with olive oil, curry powder, salt and paprika
  • Set aside
  • Add macaroni back into pan add a little bit of oat milk and enough vegan cheese
  • Cook until cheese is melted and all is well mixed together
  • Place mac and cheese mixture in a muffin baking form
  • Place both mac&cheese and chickpeas in oven and bake for 15 to 20 minutes
  • Serve hot
