Coconut Cookies

Ingredients
- 1/2 cup coconut sugar
- 2 tbsp almond milk
- 3 tbsp cocoa powder
- 3 tbsp coconut oil
- 1/3 cup almond butter
- 1 cup rolled oats
- 1/2 cup unsweetened shredded coconut
- 1/2 tsp vanilla
- 1/4 tsp Salt
Instructions
- Line a baking sheet with parchment Paper
- Add the coconut sugar, almond milk, cocoa powder and coconut oil to a medium saucepan over, lower heat
- Let boil for 1 minute, remove from heat and add almond butter, rolled oats, unsweetened shredded coconut, vanilla and salt
- Stir to combine
- Form small balls, top with shredded coconut and place onto the prepared baking sheet
- Place in the fridge for about 20 minutes
