Rice Veggie Bowl

Ingredients
- 1/2 cup brown rice
- 1 sweet potato
- 1 broccoli
- 1 tbsp Pepita Seeds
- 1/2 red onion chopped
- 1 handful kale
- 1/4 tsp Salt
- 1/4 tsp Pepper
Instructions
- Preheat oven to 400 F and arrange sweet potatoes and onions on a bare baking sheet
- Heat a large skillet over medium heat with 1 cup brown rice and 2 cups water
- Cook rice until tender about 15 minutes
- In the meantime, drizzle both with a bit of oil
- Bake for 10 minutes, then remove from oven flip sweet potatoes and add broccoli
- Drizzle broccoli with a bit of oil and season with a pinch each salt and pepper
- Bake for another 8-10 minutes, then add kale
- Drizzle kale with a touch more oil and season with a pinch of salt and pepper.
- Bake for another 4-5 minutes
