Ingredients

  • 8-10 fingerling potatoes
  • 1/2 cup Farro
  • 1/2 cup Couscous
  • 2 1/2 cup water
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1 tbsp olive oil

Instructions

  • Preheat oven to 425 °F
  • Cut potatoes in quarters
  • Line a baking dish with parchment paper and lay out the potatoes
  • Sprinkle with the spices and add olive oil
  • Bake for 20 minutes, flipping Galway through baking
  • Heat water in a large sauce pan
  • When the water is boiling add the Farro and salt, cook for 10 minutes
  • Add in the Couscous now and cook for another 10 minutes, add water if needed
  • Cook until water has absorbed enjoy together with the potatoes
