Couscous-Farro Mix with Fingerling Potatoes

  • 8-10 fingerling potatoes
  • 1/2 cup Farro
  • 1/2 cup Couscous
  • 2 1/2 cup water
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1 tbsp olive oil
  1. Preheat oven to 425 °F

  2. Cut potatoes in quarters
  3. Line a baking dish with parchment paper and lay out the potatoes
  4. Sprinkle with the spices and add olive oil
  5. Bake for 20 minutes, flipping Galway through baking
  6. Heat water in a large sauce pan
  7. When the water is boiling add the Farro and salt, cook for 10 minutes
  8. Add in the Couscous now and cook for another 10 minutes, add water if needed
  9. Cook until water has absorbed enjoy together with the potatoes
