Couscous-Farro Mix with Fingerling Potatoes

Ingredients
- 8-10 fingerling potatoes
- 1/2 cup Farro
- 1/2 cup Couscous
- 2 1/2 cup water
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp cayenne pepper
- 1/2 tsp garlic powder
- 1 tbsp olive oil
Instructions
- Preheat oven to 425 °F
- Cut potatoes in quarters
- Line a baking dish with parchment paper and lay out the potatoes
- Sprinkle with the spices and add olive oil
- Bake for 20 minutes, flipping Galway through baking
- Heat water in a large sauce pan
- When the water is boiling add the Farro and salt, cook for 10 minutes
- Add in the Couscous now and cook for another 10 minutes, add water if needed
- Cook until water has absorbed enjoy together with the potatoes
