Scrambled Tofu Breakfast Sandwich


Scrambled Tofu

  • 7 oz firm tofu
  • 1 tbsp nutritional yeast
  • 1/2 tsp turmeric
  • 1/4 tsp chili powder
  • 1/4 tsp salt
  • 1/4 tsp garlic powder
  • 1/8 tsp cayenne
  • 1 tbsp olive oil


  • 1 English muffin (sliced in half and toasted)
  • 1 tbsp spicy vegan mayo
  • 1/2 avocado (sliced)
  • 1/2 cup micro greens of choice
  1. Cut your tofu in half
  2. Wrap tofu in a towel or paper towel and press out moisture
  3. In a large bowl, crumble the tofu
  4. Whisk dry ingredients in a small bowl and pour into bowl with tofu
  5. Stir well to coat crumbled tofu
  6. In a pan over medium heat, drizzle a bit of olive oil and add tofu mixture
  7. Meanwhile, toast english muffins and spread each half with vegan mayo
  8. Add a layer of scrambled tofu, followed by microgreens, avocado, and the other half of the english muffin

This recipe is also very tasty with a bagel instead of a English muffin!
