Sweet Potato Pearl Couscous Skillet with Kale

 

Potato Pearl Couscous Skillet with Kale

This sweet potato quinoa skillet takes less than thirty minutes to make. Can also be made as a one pot meal.

  • 1 small sweet potato
  • 1 tbsp olive oil
  • 1 clove garlic (minced)
  • 1/2 cup Tri-Color pearl couscous (uncooked)
  • 1 cup Water
  • 1 tsp apple cider vinegar
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 1/2 cups kale (finely shredded)
  1. Heat a sauce pan over medium heat, add in couscous and water
  2. Cook until water is absorbed
  3. Peel and cut the sweet potatoes into thin sized pieces, set aside
  4. Heat a large skillet or sauté pan over low-medium heat and add in the olive oil
  5. Add in the sweet potatoes and sauté for 2 minutes
  6. Then add in the garlic, and couscous , sauté for 2 minutes more
  7. Add in the apple cider vinegar, salt, pepper and kale
  8. Cook for 3 minutes, until the kale is bright green, and the sweet potatoes are tender
  9. Serve warm
