Potato Pearl Couscous Skillet with Kale
This sweet potato quinoa skillet takes less than thirty minutes to make. Can also be made as a one pot meal.

Ingredients
- 1 small sweet potato
- 1 tbsp olive oil
- 1 clove garlic minced
- 1/2 cup Tri-Color pearl couscous uncooked
- 1 cup Water
- 1 tsp apple cider vinegar
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 1/2 cups kale finely shredded
Instructions
- Heat a sauce pan over medium heat, add in couscous and water
- Cook until water is absorbed
- Peel and cut the sweet potatoes into thin sized pieces, set aside
- Heat a large skillet or sauté pan over low-medium heat and add in the olive oil
- Add in the sweet potatoes and sauté for 2 minutes
- Then add in the garlic, and couscous , sauté for 2 minutes more
- Add in the apple cider vinegar, salt, pepper and kale
- Cook for 3 minutes, until the kale is bright green, and the sweet potatoes are tender
- Serve warm
