Happy Bites

  • 6 tbsp coconut oil (divided)
  • 1/4 cup plus 2 tbsp peanut butter (divided)
  • 1/4 cup plus 1 tbsp maple syrup (divided)
  • 1/4 cup cocoa powder
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 1 cup rolled oats
  1. Place 15 small cupcake liners into a muffin tin
  2. In a small saucepan over low heat, melt 5 tbsp coconut oil and stir together 2 tbsp peanut butter, 1/4 cup maple syrup, 1/4 cup cocoa powder, 1 tsp vanilla extract, and 1 pinch salt
  3. When fully combined, remove from heat and stir in 1 cup rolled oats
  4. Spoon into cupcake liners
  5. Place in freezer while making the peanut butter topping
  6. In a small saucepan over low heat, stir together 1/4 cup peanut butter, 1 tbsp maple syrup, and 1 tbsp coconut oil
  7. Spoon the warm peanut butter mixture over the chocolate oat mixture
  8. Freeze for 15 to 20 minutes

You can store them in the refrigerator, I personally prefer them frozen.
