Easy Breakfast Skillet

I have a huge heart for potatoes, since its very popular in switzerland in various dishes, like hashbrowns or as we call it roesti 🙂 to raclette and so on. I can only recommend this delicious, healthy potato skillet recipe.

  • 1 tbsp coconut oil
  • 1 medium potato (yukon)
  • 1/4 red pepper (chopped)
  • 1/4 orange pepper (chopped)
  • 1/4 onion (red, chopped)
  • 1 cup spinach (optional)
  • 1/4 tsp pepper
  • 1/4 tsp pink salt
  • 1/8 tsp Italian seasoning
  • 1/8 tsp garlic powder
  • 30 g tempeh

Toppings

  • Sliced or mashed avocado
  1. Prepare your vegetables
  2. Over medium high heat, melt coconut oil in a large skillet
Add the potatoes in a single layer
  3. Depending on the size of skillet this may need done in batches
Cook for 2 minutes
  4. Flip, cook another 2 minutes
  5. Stir again, cook 2 more minutes
Reduce heat to medium low
  6. Add in peppers and onions
  7. Stir together
Add tempeh by breaking off small pieces and adding it in
  8. Cook 4 minutes
Add in all your seasonings and stir to combine
Now last but not least, add in the spinach and cook for 2 minutes. 
Serve with a side of sliced or mashed avocado, and enjoy with some veganaise or ketchup
