Blueberry Banana Bread

  • 1 1/4 cups rolled oats
  • 1 1/4 cups light spelt flour
  • 1/3 cup sugar (coconut or pure cane)
  • 2 tsp baking powder
  • Pinch of salt
  • 3 ripe bananas (mashed)
  • 1/4 cup oat milk
  • 1/4 cup coconut oil
  • 1 cup frozen or fresh blueberries
  • 1 tsp vanilla extract
  • 1/4 cup , crushed walnuts, optional
  1. Preheat oven to 350 degrees F
  2. Grease a loaf pan lightly with oil
  3. In a medium sized mixing bowl, combine the flour, oats, sugar, baking powder, and pinch of salt, stir to combine
  4. Mash the bananas with a fork in a small bowl
  5. Next, add the mashed bananas, oil, oat milk and optional vanilla, mix to combine,
  6. Gently fold in the blueberries
  7. Pour the batter into the loaf pan
  8. Place in oven and bake for 50 – 55 minutes Your bread is ready, when the top is golden and toothpick will come out clean
  9. Let cool for 15 minutes in the
  10. Happy eating!

Store the bread covered on the counter for up to 3 days or in the refrigerator up to 1 week. You can also keep your blueberry banana bread in the freezer for up to 3 months 🙂 Yay !
