Blueberry Banana Bread

Ingredients

  • 1 1/4 cups rolled oats
  • 1 1/4 cups light spelt flour
  • 1/3 cup sugar coconut or pure cane
  • 2 tsp baking powder
  • Pinch of salt
  • 3 ripe bananas mashed
  • 1/4 cup oat milk
  • 1/4 cup coconut oil
  • 1 cup frozen or fresh blueberries
  • 1 tsp vanilla extract
  • 1/4 cup , crushed walnuts, optional

Instructions

  • Preheat oven to 350 degrees F
  • Grease a loaf pan lightly with oil
  • In a medium sized mixing bowl, combine the flour, oats, sugar, baking powder, and pinch of salt, stir to combine
  • Mash the bananas with a fork in a small bowl
  • Next, add the mashed bananas, oil, oat milk and optional vanilla, mix to combine,
  • Gently fold in the blueberries
  • Pour the batter into the loaf pan
  • Place in oven and bake for 50 – 55 minutes Your bread is ready, when the top is golden and toothpick will come out clean

Notes

Store the bread covered on the counter for up to 3 days or in the refrigerator up to 1 week. You can also keep your blueberry banana bread in the freezer for up to 3 months 🙂 Yay !
