Blueberry Banana Bread
Ingredients
- 1 1/4 cups rolled oats
- 1 1/4 cups light spelt flour
- 1/3 cup sugar coconut or pure cane
- 2 tsp baking powder
- Pinch of salt
- 3 ripe bananas mashed
- 1/4 cup oat milk
- 1/4 cup coconut oil
- 1 cup frozen or fresh blueberries
- 1 tsp vanilla extract
- 1/4 cup , crushed walnuts, optional
Instructions
- Preheat oven to 350 degrees F
- Grease a loaf pan lightly with oil
- In a medium sized mixing bowl, combine the flour, oats, sugar, baking powder, and pinch of salt, stir to combine
- Mash the bananas with a fork in a small bowl
- Next, add the mashed bananas, oil, oat milk and optional vanilla, mix to combine,
- Gently fold in the blueberries
- Pour the batter into the loaf pan
- Place in oven and bake for 50 – 55 minutes Your bread is ready, when the top is golden and toothpick will come out clean

Notes
Store the bread covered on the counter for up to 3 days or in the refrigerator up to 1 week. You can also keep your blueberry banana bread in the freezer for up to 3 months 🙂 Yay !
