Fingerling Potato

  • 10 ish Fingerling Potatoes
  • 1-2 tbsp Virgin Coconut Oil (melted)
  • 1 tsp Ground Himalayan Salt
  • 1 tsp paprika
  • 1 tsp fresh ground pepper
  1. Preheat oven to roast setting at 550ºF
  2. Line a baking sheet with parchment paper
  3. Slice each finger potato with a sharp knife, cutting thin slices but stopping near the bottom of each potato
  4. Do not slice potato all the way through
  5. I like to use chopsticks, place them on each aide of the potato, so you can’t Cut all the way through 😉
  6. Place potatoes on baking sheet
  7. Brush the top of each potato with coconut oil, pushing a little of the oil down between each of the sections
  8. Top with salt, pepper and paprika
  9. Place in oven and roast until potatoes are tender in the middle and slightly browned and crispy on the edges
  10. Enjoy as a side or main
