Spinach Pasta with Coconut Sauce

Spinach Pasta with Coconut Sauce

  • 1 cup pasta
  • 1 cup spinach
  • 1/4 tsp salt

Sauce

  • 1 cup coconut milk (canned)
  • 1/4 tsp dried basil
  • 1/2 tsp salt
  • 2 tbsp cornstarch
  • 1 tbsp garlic (minced)
  1. In a mixing bowl, add coconut milk, basil, salt, and cornstarch
  2. Whisk it combine them well and set this base sauce aside
  3. Over medium heat in a pan add vegetable oil and minced garlic
  4. Sauté till garlic becomes golden brown
  5. Add the base sauce
  6. Cook till it reaches desired consistency
  7. Cook pasta as per the package’s instruction
  8. Add pasta and cook for a minute
  9. In a heavy bottomed pan, add coconut milk pasta sauce, spinach and cooked pasta
  10. Cook for 3 minutes until all the ingredients combined well with each other
