Spinach Pasta with Coconut Sauce

Spinach Pasta with Coconut Sauce
- 1 cup pasta
- 1 cup spinach
- 1/4 tsp salt
Sauce
- 1 cup coconut milk (canned)
- 1/4 tsp dried basil
- 1/2 tsp salt
- 2 tbsp cornstarch
- 1 tbsp garlic (minced)
- In a mixing bowl, add coconut milk, basil, salt, and cornstarch
- Whisk it combine them well and set this base sauce aside
- Over medium heat in a pan add vegetable oil and minced garlic
- Sauté till garlic becomes golden brown
- Add the base sauce
- Cook till it reaches desired consistency
- Cook pasta as per the package’s instruction
- Add pasta and cook for a minute
- In a heavy bottomed pan, add coconut milk pasta sauce, spinach and cooked pasta
- Cook for 3 minutes until all the ingredients combined well with each other
