Preheat oven to 200 F
Combine 1 cup Couscous with 2 cups water in a small saucepan
Combine 1/2 cup quinoa with 1 cup water in another saucepan
Cook both until water is absorbed
Drain tofu , cut into slices and dry with paper towels
Chop you veggies and set aside as well
In a frying pan heat a good amount of olive oil on medium heat
Prepare one small bowl with olive oil and turmeric and another with the matzo meal
Dip each tofu slice in the olive oil and than in the matzo meal
Fry tofu for 2-3 minutes
Dry with paper towels again and keep warm in the oven
In the same frying pan combine Couscous, quinoa, zucchini, peas and onion
Cook for 5-10 minutes, add some parsley and cashews towards the last few minutes of cooking
