Thai fried Rice

Ingredients

olive oil

broccoli florets - bite sized
1
small can Chickpeas
1/2
small onion
chopped
1
cup
cooked rice of your choice *
1/2
red bell pepper
cut into small pieces

tbsp
peanuts

tbsp
Soy sauce
Instructions
Add the olive oil to a large nonstick skillet set over medium heat
When hot, add in the onion and cook for about 2 to 3 minutes, until it starts to soften
Stir in the pepper, broccoli and Chickpeas, cook for about 5 to 7 minutes
Add the cold rice to the skillet and cook, stirring frequently, for 3 to 4 minutes, until fried and hot
Remove from the heat and stir in the peanuts and soy sauce
Notes
*For fried rice recipes it is useful to have some pre-cooked rice in your fridge*
