Ingredients

  • 1/2 cup rice
  • 1/4 cup peas
  • 1-2 tbsp olive oil
  • 1/2 small onion chopped
  • 1 carrot chopped
  • 1 can coconut milk small

Instructions

  • Cook the rice according to package directions
  • I always cook enough rice and store it in the fridge for fast meals
  • If you use fresh or frozen peas and corn kernels, cook them according to package directions
  • If you use canned peas or corn kernels, you can definitely skip this step
  • Heat oil in a skillet, add chopped onion and diced carrots, cook them over medium-high heat for about 2 minutes
  • Add peas and corn and cook for 2 minutes
  • Stir in your coconut milk
  • Now add the rice and cook for 2 or 3 minutes or until rice is hot

Notes

I like to cook more than one portion of this meal and store it in the fridge for lazy days :)
