Breakfast Tortilla

Ingredients

  • 1/2 small red onion chopped
  • 1/4 cup green zucchini cut into small cubes
  • 1 large potato
  • 1 cup chickpea flour
  • 1 cup water
  • Olive oil
  • 1/4 tsp salt

Instructions

  • Peel and wash your potatoes than cut into small pieces
  • In a large frying pan heat oil, when hot add onions, potatoes and zucchini
  • Cook for 10 to 15 minutes
  • In a bowl combine flour, water, salt and potato mixture
  • Give more oil in a frying pan and heat over medium heat
  • Add tortilla mixture and cook for 5 minutes
  • Place a plate over tortilla and flip
  • Cook on the other side for about another 5 minutes
  • Turn over again if required
