Ingredients

  • 1 handful mixed greens
  • 1/2 avocado
  • 1/4 cucumber thinly sliced
  • 1 to mato thinly sliced
  • 1 tbsp pickled onions
  • 1 tbsp vegan pesto
  • 1 tbsp tomato chutney
  • 2 slices bread of your choice
  • Pinch of sprouts

Instructions

  • Spread both slices with tomato chutney
  • Layer one slice with cucumbers, tomatoes, onions
  • Top with pesto
  • Add the avocado, sprouts and greens
  • Finish by adding the second bread slice
  • Enjoy
