Ingredients

cups
of spiralized zucchini

cups
of spiralized carrots
1/2
cucumber
thin sliced with a peeler
1/2
red bell pepper
thinly sliced
1/2
cup
snap peas
2
green onions
finely chopped
1 1/2
tbsp
sesame seeds
Sauce
1/2
cup
of peanut butter
2
tbsp
of toasted sesame oil
1
garlic clove
1
tsp
fresh ginger
2
tbsp
of low sodium soy sauce
2
tbsp
of lime juice
2
tbsp
of water
Instructions
Add all of the vegetables and sesame seeds to a large bowl and toss to mix
In a separate medium bowl, whisk together all of the sauce ingredients until smooth
Pour the sauce onto the veggies and mix well to combine
Serve immediately
Store any leftovers in the fridge and consume within a few days
