Fried tofu with mixed Grains

A lot of people are hard to convince, that tofu can acually taste like something good. And I totally get it! But this is one of my favourite waysnof making fried Tofu, try it and let me know if you like it.

Ingredients

  • 1 cup Couscous
  • 1/2 cup red quinoa
  • 1 cup peas
  • 1/2 cup green zucchini chopped
  • 1/2 cup yellow zucchini chopped
  • 1/2 red onion chopped
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp turmeric
  • Olive oil
  • Matzo meal
  • Parsley
  • 1/2 cup cashews

Instructions

  • Preheat oven to 200 F
  • Combine 1 cup Couscous with 2 cups water in a small saucepan
  • Combine 1/2 cup quinoa with 1 cup water in another saucepan
  • Cook both until water is absorbed
  • Drain tofu , cut into slices and dry with paper towels
  • Chop you veggies and set aside as well
  • In a frying pan heat a good amount of olive oil on medium heat
  • Prepare one small bowl with olive oil and turmeric and another with the matzo meal
  • Dip each tofu slice in the olive oil and than in the matzo meal
  • Fry tofu for 2-3 minutes
  • Dry with paper towels again and keep warm in the oven
  • In the same frying pan combine Couscous, quinoa, zucchini, peas and onion
  • Cook for 5-10 minutes, add some parsley and cashews towards the last few minutes of cooking
