Rice Veggie Bowl

Ingredients

  • 1/2 cup brown rice
  • 1 sweet potato
  • 1 broccoli
  • 1 tbsp Pepita Seeds
  • 1/2 red onion chopped
  • 1 handful kale
  • 1/4 tsp Salt
  • 1/4 tsp Pepper

Instructions

  • Preheat oven to 400 F and arrange sweet potatoes and onions on a bare baking sheet
  • Heat a large skillet over medium heat with 1 cup brown rice and 2 cups water
  • Cook rice until tender about 15 minutes
  • In the meantime, drizzle both with a bit of oil
  • Bake for 10 minutes, then remove from oven flip sweet potatoes and add broccoli
  • Drizzle broccoli with a bit of oil and season with a pinch each salt and pepper
  • Bake for another 8-10 minutes, then add kale
  • Drizzle kale with a touch more oil and season with a pinch of salt and pepper.
  • Bake for another 4-5 minutes
