Zucchini with Chickpeas and Mushrooms

Ingredients

  • 1 large yellow zucchini
  • 1 onion
  • 1 cup mushrooms
  • 1 can chickpeas
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 handful vegan cheese

Instructions

  • Preheat oven to 350 °F
  • Grease a baking dish
  • Scoop out the flesh of the zucchini
  • Place flesh in a bowl
  • Chop onion and slice some mushrooms
  • Heat oil in a skillet over medium heat
  • Cook onions for 5 minutes
  • Add mushrooms and chickpeas, salt, pepper
  • Add some vegan cheese and the zucchini flesh
  • Cook for another 5 minutes
  • Spoon mixture into zucchini shells
  • Bake in oven for 30 to 40 minutes, or until zucchini are golden brown
