Rice with beans & fried tofu

Ingredients

  • 1 cup white rice
  • 2 cups water
  • 1 pack silken firm tofu
  • 1/2 cup frozen edamame
  • 1/2 cups frozen beans
  • 1 tbsp oil

Instructions

  • Add rice and water in a pan
  • Cook over medium heat for about 20 minutes
  • Pat the tofu dry
  • Slice the pressed tofu into smaller pieces
  • Set the skillet over medium-high heat and add oil
  • Add all of the tofu in a single layer
  • Fry until all sides are browned and crispy
  • Set tofu aside and keep the skillet
  • Add edamame and beans
  • Cook for 10 minutes
  • Arrange everything on a plate
