Potato Pearl Couscous Skillet with Kale

This sweet potato quinoa skillet takes less than thirty minutes to make. Can also be made as a one pot meal.

Ingredients

  • 1 small sweet potato
  • 1 tbsp olive oil
  • 1 clove garlic minced
  • 1/2 cup Tri-Color pearl couscous uncooked
  • 1 cup Water
  • 1 tsp apple cider vinegar
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 1/2 cups kale finely shredded

Instructions

  • Heat a sauce pan over medium heat, add in couscous and water
  • Cook until water is absorbed
  • Peel and cut the sweet potatoes into thin sized pieces, set aside
  • Heat a large skillet or sauté pan over low-medium heat and add in the olive oil
  • Add in the sweet potatoes and sauté for 2 minutes
  • Then add in the garlic, and couscous , sauté for 2 minutes more
  • Add in the apple cider vinegar, salt, pepper and kale
  • Cook for 3 minutes, until the kale is bright green, and the sweet potatoes are tender
  • Serve warm
