Zucchini Noodle Bowl

Ingredients

  • 3 cups of spiralized zucchini
  • 1 1/2 cups of spiralized carrots
  • 1/2 cucumber thin sliced with a peeler
  • 1/2 red bell pepper thinly sliced
  • 1/2 cup snap peas
  • 2 green onions finely chopped
  • 1 1/2 tbsp sesame seeds

Sauce

  • 1/2 cup of peanut butter
  • 2 tbsp of toasted sesame oil
  • 1 garlic clove
  • 1 tsp fresh ginger
  • 2 tbsp of low sodium soy sauce
  • 2 tbsp of lime juice
  • 2 tbsp of water

Instructions

  • Add all of the vegetables and sesame seeds to a large bowl and toss to mix
  • In a separate medium bowl, whisk together all of the sauce ingredients until smooth
  • Pour the sauce onto the veggies and mix well to combine
  • Serve immediately
  • Store any leftovers in the fridge and consume within a few days
