Heat a sauce pan over medium heat, add in couscous and water
Cook until water is absorbed
Peel and cut the sweet potatoes into thin sized pieces, set aside
Heat a large skillet or sauté pan over low-medium heat and add in the olive oil
Add in the sweet potatoes and sauté for 2 minutes
Then add in the garlic, and couscous , sauté for 2 minutes more
Add in the apple cider vinegar, salt, pepper and kale
Cook for 3 minutes, until the kale is bright green, and the sweet potatoes are tender
Serve warm
