Fried Rice

Fried Rice

Ingredients
- 1/2 cup rice
- 1/4 cup peas
- 1-2 tbsp olive oil
- 1/2 small onion chopped
- 1 carrot chopped
- 1 can coconut milk small
Instructions
- Cook the rice according to package directions
- I always cook enough rice and store it in the fridge for fast meals
- If you use fresh or frozen peas and corn kernels, cook them according to package directions
- If you use canned peas or corn kernels, you can definitely skip this step
- Heat oil in a skillet, add chopped onion and diced carrots, cook them over medium-high heat for about 2 minutes
- Add peas and corn and cook for 2 minutes
- Stir in your coconut milk
- Now add the rice and cook for 2 or 3 minutes or until rice is hot
Notes
I like to cook more than one portion of this meal and store it in the fridge for lazy days 🙂
