Zucchini with Chickpeas and Mushrooms
Ingredients
- 1 large yellow zucchini
- 1 onion
- 1 cup mushrooms
- 1 can chickpeas
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 handful vegan cheese
Instructions
- Preheat oven to 350 °F
- Grease a baking dish
- Scoop out the flesh of the zucchini
- Place flesh in a bowl
- Chop onion and slice some mushrooms
- Heat oil in a skillet over medium heat
- Cook onions for 5 minutes
- Add mushrooms and chickpeas, salt, pepper
- Add some vegan cheese and the zucchini flesh
- Cook for another 5 minutes
- Spoon mixture into zucchini shells
- Bake in oven for 30 to 40 minutes, or until zucchini are golden brown
