Minestrone

Minestrone
- 1/2 tsp vegetable oil
- 1/2 large onion (chopped)
- 3/8 large stalk celery (chopped)
- 1/2 tsp Italian seasoning
- Salt and pepper
- 15 g tomatoes (diced)
- 3/4 cup and 1 tbsp and 1 tsp vegetable broth
- 1 small sweet potato (cut into smaller pieces)
- 1 large carrots (sliced thin)
- 2 Handful green beans (halved)
- 1 clove garlic (minced)
- Heat oil in a soup pot over medium-high heat
- Saute onion, celery, Italian seasoning, salt and pepper until tender, about 5 minutes
- Stir in tomatoes, with the juice, broth, sweet potatoes, carrots, green beans and garlic
- Bring to a boil, reduce heat to low and simmer, until vegetables are tender
- Your minestrone should be ready in about 30 minutes
