Minestrone

  • 1/2 tsp vegetable oil
  • 1/2 large onion (chopped)
  • 3/8 large stalk celery (chopped)
  • 1/2 tsp Italian seasoning
  • Salt and pepper
  • 15 g tomatoes (diced)
  • 3/4 cup and 1 tbsp and 1 tsp vegetable broth
  • 1 small sweet potato (cut into smaller pieces)
  • 1 large carrots (sliced thin)
  • 2 Handful green beans (halved)
  • 1 clove garlic (minced)
  1. Heat oil in a soup pot over medium-high heat
  2. Saute onion, celery, Italian seasoning, salt and pepper until tender, about 5 minutes
  3. Stir in tomatoes, with the juice, broth, sweet potatoes, carrots, green beans and garlic
  4. Bring to a boil, reduce heat to low and simmer, until vegetables are tender
  5. Your minestrone should be ready in about 30 minutes
