Vegetable Stir Fry

Stir fry is a super easy meal to make and can be made with so many different ingredients.  You start by heating a large pan and adding some oil.  I usually like to use sesame oil when making stir fry because it adds some nice flavor but you could use any kind of oil you like.

  • 1 tsp sesame oil
  • 1 cup thinly sliced vegetables (carrots, peas, purple cabbage and yellow pepper)
  • 1/4 cup chickpeas

Sauce

  • 1 tbsp maple syrup
  • 1 tbsp toasted sesame oil
  • 1 clove garlic (finely grated)
  • 1/2 teaspoons finely grated ginger
  • 2 tbsp water
  • 1/2 tsp toasted sesame seeds
  • 2 tbsp soy sauce
  1. Heat a large skillet over medium heat and add sesame oil and vegetables
  2. Cook vegetables until softened, about 10 minutes
  3. Add the chickpeas, stir and then stir in the sauce ingredients
  4. Cook for another 3-5 minutes
  5. Serve stir fry over rice or noodles
