Vegan Protein Nut Bars
Nut Bars
Ingredients
- 1 cup packed dates pitted
- 1/4 cup maple syrup
- 1/4 cup almond butter
- 1 cup roasted unsalted almonds loosely chopped
- 1 1/2 cups rolled oats
- 2 tbsp chia seed
- 2 tbsp flax seed
- 1/4 cup walnuts crushed
Instructions
- Process dates in a food processor until small bits remain (about 1 minute)
- It should form a "dough" like consistency
- Toast your oats, almonds and walnuts for 10-15 minutes at 350 F, until slightly golden brown
- Chop your almonds
- Place oats, almonds, walnuts and dates in a large mixing bowl - set aside
- Warm maple syrup and almond butter in a small saucepan over low heat
- Mix everything together in the bowl
- Transfer to a small baking dish lined with parchment paper
- Use a glass to press down firmly until flattened
- Cover with parchment, and let firm up in freezer for 15-20 minutes
- Remove bars from pan and chop into even bars
- Store leftovers in freezer for a few days
