  • 1 cup packed dates pitted
  • 1/4 cup maple syrup
  • 1/4 cup almond butter
  • 1 cup roasted unsalted almonds loosely chopped
  • 1 1/2 cups rolled oats
  • 2 tbsp chia seed
  • 2 tbsp flax seed
  • 1/4 cup walnuts crushed


  • Process dates in a food processor until small bits remain (about 1 minute)
  • It should form a "dough" like consistency
  • Toast your oats, almonds and walnuts for 10-15 minutes at 350 F, until slightly golden brown
  • Chop your almonds
  • Place oats, almonds, walnuts and dates in a large mixing bowl - set aside
  • Warm maple syrup and almond butter in a small saucepan over low heat
  • Mix everything together in the bowl
  • Transfer to a small baking dish lined with parchment paper
  • Use a glass to press down firmly until flattened
  • Cover with parchment, and let firm up in freezer for 15-20 minutes
  • Remove bars from pan and chop into even bars
  • Store leftovers in freezer for a few days
