Vegetable Stir Fry

Vegetable Stir Fry
Stir fry is a super easy meal to make and can be made with so many different ingredients. You start by heating a large pan and adding some oil. I usually like to use sesame oil when making stir fry because it adds some nice flavor but you could use any kind of oil you like.

Ingredients
- 1 tsp sesame oil
- 1 cup thinly sliced vegetables carrots, peas, purple cabbage and yellow pepper
- 1/4 cup chickpeas
Sauce
- 1 tbsp maple syrup
- 1 tbsp toasted sesame oil
- 1 clove garlic finely grated
- 1/2 teaspoons finely grated ginger
- 2 tbsp water
- 1/2 tsp toasted sesame seeds
- 2 tbsp soy sauce
Instructions
- Heat a large skillet over medium heat and add sesame oil and vegetables
- Cook vegetables until softened, about 10 minutes
- Add the chickpeas, stir and then stir in the sauce ingredients
- Cook for another 3-5 minutes
- Serve stir fry over rice or noodles
