Zucchini Noodle Bowl
This Asian-style zoodle recipe is very quick and easy to prepare. It’s raw and packed with nutrition.

Ingredients
- 3 cups of spiralized zucchini
- 1 1/2 cups of spiralized carrots
- 1/2 cucumber thin sliced with a peeler
- 1/2 red bell pepper thinly sliced
- 1/2 cup snap peas
- 2 green onions finely chopped
- 1 1/2 tbsp sesame seeds
Sauce
- 1/2 cup of peanut butter
- 2 tbsp of toasted sesame oil
- 1 garlic clove
- 1 tsp fresh ginger
- 2 tbsp of low sodium soy sauce
- 2 tbsp of lime juice
- 2 tbsp of water
Instructions
- Add all of the vegetables and sesame seeds to a large bowl and toss to mix
- In a separate medium bowl, whisk together all of the sauce ingredients until smooth
- Pour the sauce onto the veggies and mix well to combine
- Serve immediately
- Store any leftovers in the fridge and consume within a few days
